Agar Agar Powder a gelling and thickening agent.
As a gelatin substitute use approximately 1/2 to 1/3 the amount of agar.
Typically Used In: Baking and Confections, Sauces and Glazes. Gelling strength (1.5%) greater than 900gm/cm2, Gel Temperature 100 - 104F, PH 6-9.
Product Highlight: Agar Agar is a vegan alternative to gelatin that is procured from red seaweed. Agar Agar possesses an extremely strong thickening and gelling property which requires less usage than a standard gelatin. Agar Agar is also Odorless and Tasteless. As opposed to standard Gelatin, Agar Agar produces a firmer, more stable finished product.
